Description: White Peony (Bai Mu Dan) is the most common style of traditional white tea and consists of two tealeaves and a silvery bud. Gentle processing and a unique withering process result in an amber-orange infusion with low astringency, weighty mouthfeel and a mild flavour that pairs well with most foods.

Tasting Notes: Pure white tea with mellow-sweet notes of fresh hay and accents of honey and nectar.

Water Temperature: 85°C
Tea to Water Ratio: 2 tbsp per 8 oz
Steep Time: 4 mins (1st infusion), 5 mins (2nd infusion)

We encourage you to venture with the quantity of tea and the duration of the steep time to discover your perfect brew strength. Altering the water temperature is not favoured, as water that is too hot will burn the leaves causing them to over-extract the catechins or tannins of tea, while water that is too cool might not fully evoke the flavours and the aromas of tea.
